Method

To make this healthy lasagne, follow these steps:

  1. Preheat the oven to 190°C (Gas Mark 5).
  2. Heat the olive oil in a large pan over a medium heat. Add the onion, garlic, carrots and celery and cook for 5 minutes, stirring occasionally.
  3. Add the mushrooms and cook for a further 5 minutes. Then add the tomato puree and chopped tomatoes. Season with oregano, sugar and some salt and pepper.

  6. Sprinkle the parmesan cheese over the top and bake in the preheated oven for 40 minutes, or until golden and bubbling.
