Method
To make this healthy lasagne, follow these steps:
- Preheat the oven to 190°C (Gas Mark 5).
- Heat the olive oil in a large pan over a medium heat. Add the onion, garlic, carrots and celery and cook for 5 minutes, stirring occasionally.
- Add the mushrooms and cook for a further 5 minutes. Then add the tomato puree and chopped tomatoes. Season with oregano, sugar and some salt and pepper.

- Sprinkle the parmesan cheese over the top and bake in the preheated oven for 40 minutes, or until golden and bubbling.
- Serve with a green salad.
