Healthy Vegetable Lasagne Recipe UK
Lasagne is a classic Italian dish that is loved by all. This vegetarian version of the traditional lasagne is full of flavour and is packed with healthy vegetables. It is a great way to get your family to eat their greens, as the dish tastes so delicious. This recipe is the perfect dish to cook for a special occasion or a family gathering. It is also a great way to use up any leftover vegetables you may have in the fridge.Ingredients
For the lasagne you will need:
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 carrots, diced
- 2 red peppers, diced
- 200g mushrooms, sliced
- 1 courgette, diced
- 500g passata
- 2 tsp oregano
- Salt and pepper, to taste
- 8-10 lasagne sheets
- 200g grated cheese
Instructions
1. Preheat the oven to 180C/350F/Gas Mark 4. Heat a large saucepan over a medium heat and add a drizzle of olive oil. Add in the diced onion and garlic and cook for 5 minutes until softened.
2. Add in the diced carrots, red peppers, mushrooms and courgette and cook for a further 5 minutes.
3. Pour in the passata, oregano, salt and pepper and stir to combine. Simmer for 10 minutes until the vegetables are cooked through and the sauce has thickened.
4. Grease a large baking dish and spread a layer of the vegetable sauce over the bottom. Cover with a single layer of lasagne sheets.
5. Spread a layer of the vegetable sauce over the lasagne sheets and sprinkle over some grated cheese. Repeat the layers until all of the ingredients have been used up, finishing with a layer of sauce and grated cheese.
6. Cover the dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for a further 10 minutes until the cheese is golden and bubbling.
7. Serve the lasagne hot with a side salad or steamed vegetables.
